Zoodles with avocado pesto
1 medium zucchini
2 tablespoons olive oil
Clove of garlic
1/2 ripe avocado, mashed
Few sprigs of fresh basil, finely chopped
Sea salt, to taste
Slice the zucchini lengthwise on a mandoline with a julienne blade or grate lengthwise on a cheese grater to create the ‘zoodles’. Heat the olive oil in a pan and sauté the garlic. Add the zoodles and cook 1-2 minutes. Add the avocado and basil and cook till warm through. Season with sea salt as needed.
Serve topped with Parmesan cheese, pine nuts, chopped tomato, or anything else you like!
